Easy Slow Cooker Barbeque Beef
When summer is over most of us put away the grill and smoker. This super easy recipe for Slow Cooker Barbeque Beef keeps the summer flavor around all year. Best part, you put it in the slow cooker in the morning and, with a few easy steps, it’s ready to feed the crowd for dinner!
The effort required is minimal and this dish can be quickly assembled in the morning. Start with slicing or quartering an onion.
You can use any kind of pot roast. We found a nice 3lb chuck roast on this day. Mix your spices together and rub all over the roast.
Place the onions at the bottom of the slow cooker.
Place the seasoned roast over the onions. Top with the garlic. Pour the cola over it all. Cover the slow cooker and turn to low. Cook for 8-10 hours. Or, if you’re short on time, you can turn it on high for 5-6 hours.
And just like that, it tender and juicy. The cola is the secret to this method, helping to create a braising liquid, while tenderizing the meat during the slow cook.
Now the fun part, shredding the beef. Remove the beef from the slow cooker and pour the liquid into a heat proof vessel. Use two forks, no knife needed, to shred. If desired, add some of the onion back to the meat. You also might want to add some of the liquid back.
Mix the sauce; apple cider vinegar, Worcestershire sauce, liquid smoke and barbeque sauce. Pour over the shredded beef and stir well. Cook on low for about 30 minutes and it’s ready to eat!
Get your favorite buns, bread or Hawaiian rolls out to serve. Cole slaw or pickles make a nice topping as well. Enjoy!

Ingredients
- 3 lb chuck roast
- 1 ½ teaspoons garlic salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup cola (Coke)
- 2 tablespoons apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1/2 to 1 teaspoon liquid smoke (optional, for a smokier flavor)
- 1 ½ to 2 cups barbecue sauce (your favorite variety)
- Sandwich buns or Hawaiian rolls, for serving
Instructions
- Pat the chuck roast dry and season both sides with garlic salt, pepper, smoked paprika, and onion powder.
- Place the sliced onion in the bottom of the slow cooker. Set the roast over the onions and the garlic on top of the roast.
- Pour the can of coke over the roast.
- Cover and cook on low for 8–10 hours (or high for 5–6 hours), until the meat is fork-tender.
- Remove the roast and shred with two forks. Skim excess fat from the cooking liquid, then return the shredded beef to the slow cooker.
- In a small bowl, combine Coke, apple cider vinegar, liquid smoke, Worcestershire sauce and 1½ to 2 cups of your favorite barbecue sauce. Let the mixture cook on low for another 30 minutes so the flavors blend.
- Spoon the saucy beef onto buns and serve with coleslaw or pickles if desired.
