Super Easy S’mores Bars

Summer may be over but that doesn’t mean you can’t remember the enjoyment of sitting around a campfire. With the same ingredients needed for Chocolate Chip cookies plus graham crackers and marshmallows, these bars are easy to make and ready to eat in about an hour.

On this day, one of our favorite helpers was around to assist in the baking. This is a great recipe to make with kids, as it’s easy, using just 2 bowls, a mixer and 9x13 pan. Start by breaking up the graham crackers. You don’t want to over smash them, creating a “dust,” but rather small bite-size pieces.

Next mix the dry ingredients, flour, baking soda and salt.

In a separate bowl, mix the butter and sugars. We melted it until it was very soft but not yet a liquid.

Mix the butter and sugars, then add the eggs. (My helper is not yet adept at the mixer.)

Next, add the vanilla and mix a bit more. Then, add the dry ingredients to the sugar and egg mixture. This can be done by hand or using the mixer on a slow speed. Don’t add all at once or you will have flour everywhere.

Once the cookie mixture is a light, blended consistency, it’s time to add the fun stuff. Using a spoon, add the chocolate chips, graham crackers and mini-marshmallows. Save some of each for the top of the bars.

Handiwork To Finish It Off

This, of course, is the most fun part if you are cooking with kids. The measurements don’t need to be exact here. If you want to add more on top, it will make the bars even more, yummy-ooey-gooey.

Bake for about 25-30 minutes. Like any bars the inside should come clean when inserting a toothpick. The topping with melt part-way and the marshmallows will brown, just like around the campfire.

Be sure to cool a bit before cutting and serving. They are a crowd pleaser and she was happy to share with the rest of the family!

S'mores Bars - All the campfire flavors, no campfire required!

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups semisweet chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham crackers, roughly broken into pieces (about 6–7 crackers)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper.
  2. Make the base: In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Beat in the eggs and vanilla.
  3. Mix the dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Stir into the wet mixture until just combined.
  4. Fold in the good stuff: Stir in chocolate chips, mini marshmallows, and graham cracker pieces. (If you like a gooey top, save a handful of marshmallows and chocolate chips to sprinkle on before baking.)
  5. Spread in pan: Press the dough evenly into the prepared baking dish. If reserved, sprinkle extra chocolate chips and marshmallows on top.
  6. Bake: 25–30 minutes, until golden brown and set in the center. (A toothpick should come out with a few moist crumbs, not wet batter.)
  7. Cool & slice: Let cool in the pan for at least 20 minutes before cutting into squares or bars.
