Easy Double Fudge Brownies

Brownies are the perfect dessert for just about any occasion. Serve them warm with ice cream for dessert or pack them along for a picnic lunch. This version is extra rich and fudgy with deep chocolate flavor in every bite — and the best part is they come together easily in one bowl, in just a few minutes before heading to the oven.

Start with a large microwave safe bowl as all of the ingredients will be mixed in here. Place the butter, chips and dark chocolate into the bowl.

If you’ve been around this blog at all, you know that we love to cook with the “littles” in our lives. This is another recipe great to make with kids or to let them experiment on their own.

Melt the butter and chocolate chips together in the microwave in 30-second bursts, stirring after each.

What makes this recipe easy, is that it’s all mixed in one bowl. After the chocolate and butter mixture has cooled a bit add the sugars, whisking well after each.

Next, whisk in the eggs, one at a time.

She helped me craft this recipe testing different mixes of chocolates, until we got the one we liked.

Add the vanilla after the eggs, then finally the flour and cocoa powder. Stir well. No mixer needed.

To top it off add a few chocolate chips and dust with a few salt flakes.

Pop the brownies in an oven pre-heated to 350 for about 30 minutes. The brownies are done when a toothpick comes out clean. Cool completely and then cut and serve. If your crew loves them as much as ours does they will be gone soon!

Double Fudge Brownies

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 4 oz semisweet chocolate chips
  • 4 oz 60% cacao bittersweet chocolate
  • 1 1/4 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1½ tsp vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp salt
  • Optional: ¼–½ cup extra chocolate chips.
  • Flaky sea salt, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment or lightly spray it with cooking oil.
  2. Melt the butter and chocolate chips together in a large microwave-safe bowl, heating in 30-second bursts and stirring until smooth. Let cool slightly.
  3. In the same bowl, whisk in both sugars until combined. Add eggs one at a time, mixing well after each. Stir in vanilla. (the sugars can also be mixed in a separate bowl and stirred in together)
  4. Add flour, cocoa powder, and salt. Mix just until combined — stop as soon as the flour disappears.
  5. Fold in extra chocolate chips if using.
  6. Spread batter evenly into the pan. Sprinkle lightly with flaky sea salt. Optional: sprinkle a few chocolate chips on top.
  7. Bake for 28–32 minutes, until a toothpick inserted near the center comes out with moist crumbs.
  8. Cool completely before slicing for the best texture and clean edges. Enjoy!
