Apple Cinnamon Muffins

This recipe started with two apples and nowhere to be. The result were these apple cinnamon muffins — warm, lightly sweet, and perfect for a slow morning. Best part? They are easy to make and ready in about 45 minutes.

Honestly, dicing the apples is the most tedious part of making these muffins. After dicing into fine pieces, set aside while making the remainder of the batter.

Start with mixing the dry ingredients together in a large bowl.

Part of what we like about these muffins is the use of more brown sugar than granulated sugar. Once mixed together, set aside.

In a smaller bowl, melt the butter. Add the milk, vanilla and egg. Whisk all together.

Slowly, mix the wet ingredients into the dry. The batter will feel slightly “dry.”

Fold in the apples gently to the batter. Then pour into the muffin tins, that have either been lined or greased.

Pop in the oven for about 22 minutes. Your kitchen we smell really good soon!

Perfection! So easy! After letting cool for about 5 minutes, they are ready to enjoy.

Apple Cinnamon Muffins

Ingredients

  • Dry
  • 1 ¾ cups all-purpose flour
  • ½ cup brown sugar (packed)
  • ¼ cup white sugar
  • 2 tsp cinnamon
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Wet
  • ½ cup milk
  • ⅓ cup oil or melted butter
  • 1 egg
  • 1 tsp vanilla
  • Add-ins
  • 2 apples, peeled if you want, diced small
  • Topping
  • 2 tbsp brown sugar
  • ½ tsp cinnamon

Instructions

  1. Heat oven to 375°F. Line or grease your muffin tin.
  2. Combine dry ingredients in a large bowl, breaking up any brown sugar lumps with your fingers or a fork.
  3. Whisk wet ingredients in a separate bowl.
  4. Stir wet into dry until just combined. The batter will be thick.
  5. Fold in apples.
  6. Fill muffin cups about ¾ full.
  7. Sprinkle with the brown sugar–cinnamon topping if using.
  8. Bake 18–22 minutes, until golden and a toothpick comes out clean.
  9. Let cool for 5 minutes… then enjoy one warm with coffee or tea ☕️
